Oyster yellow curry

Ingredients
1. A jar of shucked Oyster meat
2. 1 shallot
3. 1/2 inches of ginger
4. 1/4 tbls of turmeric powder
5. 2 tbls of cooking oil


How to do?
1. Rinse the oysters after draining them.
2. Pound Shallot and Ginger to be a course paste
3. Add oil, paste and turmeric powder into a pan and saute'
4 Then, add oysters and pour the small amount of water and bring to a boil.
6. Adjust the taste.

Roasted dried small shrimp

Ingredients

1. A pack of  dried small shrimp
2. Green chilies (You don't need to slice)
3. Salt if necessary (Some dried small shrimps are already salty.)
4. A slice of lemon

How to do?

1. Wash the dried shrimps
2. Put in a saucepan.
3. Add green chilies and salt (if necessary)
4. Roast over the low heat and stir continuously.
5. When the shrimps are cooked well, it will ready to serve.

Long beans with shrimp paste


Ingredients

1. 1 bunch of long beans
2. 1/2 tbls of shrimp paste
3. Green chilli slices (3 to 4 chilies)
4. 1 tbls of dry shrimps (optional)
5. Salt to taste


How to do?
1. Chop the long bean into 2 inches segment.
2. Set aside after washed them.
3. Pour a small amount of water (1 to 2 in ) into a saucepan.
4. And add shrimp paste and salt.
5. Bring to a boil over high heat.
6. Then add the long beans and chili slices.
** Do not cover the lid
7. When the long beans are cooked well, it will be ready to eat.

Green Eggplant with dried small shrimp

Ingredient


1. 8 or 9 small green eggplants
2. Sliced Green Chilies (4 to 6 chilies)
3. 1/2 teaspoon of Shrimp Paste
4. A cup of coriander leaves
5. A pack of dried small shrimps (You may use half a pack)
6. salt to taste



How to do?
1. Cut each eggplant into 4 pieces and wash them.
2. Put the eggplants into a saucepan.
3. Add the chili slices and shrimp paste
4. Pour water.  (just cover the eggplants)
5. Cook over high heat and bring to a boil.
6. Add dry shrimps and salt
7. When the eggplants are cooked well, turn off the heat.
8. Sprinkle the coriander leaves.

Smelt Fish curry

Ingredients
1. 1 pack (about 20 to 30 fishes) of smelt fish
2. 1 shallot
3. 2 in of ginger
4. 1/4 tbls of turmeric powder
4. Green chilies slices (5 to 6 chilies)
5. 1/4 tbls of fish paste
6. A lump of tamarind (soak in water)
7. A cup of coriander
8. Salt


How to do?
1. Clean and wash the smelt fishes.
2. Blend or pound the shallots and ginger.
3. Put the fishes into a saute pan.
4. Add the pounded/blended onion and ginger.
5. And add turmeric powder and fish paste.
6. Pour small amount of water and add salt to taste.
7. Cook it over medium heat and bring to a boil.
8. Add tamarind juice by squeezing the soaked tamarind and chili slices.
9. Reduce heat to low until the fishes are cooked well.
10. Sprinkle coriander leaves over it.

Chili and raw Tamarind paste


Ingredients
1.  Green raw tamarinds (7 to 10)
2.  15 green chilies
3.  1 tablespoon shrimp paste
4.  1 tablespoon of dried shrimp
5.  Salt


How to do?
1. Wash the tamarinds properly.
2.  Place the tamarinds into the mortar  and pestle.
3.  Pound with the pestle a few times
4. Add chilies and pound again.
5. Add shrimp paste and dried shrimps
5. Add salt to taste
6. Pound to a coarse paste.

Try it. It will make you get the best appetite. :)
