Shrimp and cucumber soup

 
Ingredients
 
  1. ½ kg medium shrimp
  2. 2 cucumbers
  3. 3 and ½ tablespoons red chilli paste
  4. 1 teaspoon of shrimp paste
  5. ¼ tablespoon of turmeric powder
  6. A cup of fresh basil leaves
  7. Salt and chicken stock
 
How to do?
      
1.    Devein and wash shrimps
2.    Peel cucumber and cut into serving-size pieces
3.    Place shrimps and cucumber slices in to a medium pot.
4.    Add Chilli paste and shrimp paste.
5.    And , add turmeric powder
6.    Add water as you desired
7.    Cook it over medium heat.
8.    When it gets boiled, add salt and chicken stock to taste.
9.    Add basil leaves.

Fish head soup


Ingredients

- 1 Fish head (I used catfish head)
- 3 tablespoons of red chilli paste
- 2.5 tablespoons of peanut oil
- 1 shallot
- 5 cloves of garlic
- 1 inch piece of ginger
- ¼ tablespoon of turmeric powder
- 2 or 3 stalks of fresh lemongrass (Sliced)
- 2 lemons (Sliced)
- ¼ tablespoon of shrimp paste
- Salt and chicken stock
- A cup of coriander leaves or basil leaves


How to do?

  1. Clean and wash fish head
  2. Pound shallot, garlic and ginger together.
  3. Heat oil in a pot over low heat.
  4. Add chilli paste, turmeric powder, shallot, ginger, garlic paste and shrimp paste and sauté.
  5. Add fish head and pour water as you desired.
  6. Add sliced lemongrass and bring to a boil.
  7. Add squeezed lemon juice
  8. Add salt and chicken stock and adjust the taste.
  9. Sprinkle with coriander leaves or basil leaves.

Squid Salad (Ra Gra Thoat)

Ingredients

  1. ½ kg squid
  2. 12 green chillies
  3. 1 shallot
  4. ½ inch piece of ginger
  5. 1 teaspoon of black pepper
  6. 1 lime (sliced)
  7. A cup of coriander leaves
  8. Salt and chicken stock

How to do?
 
  1. Pour some water into a pot and add 1/2 teaspoon salt.
  2. Heat to boiling over high heat               
  3. Clean squid and rinse them under cold running water.
  4. Add them to boiling water
  5. Cook until tender
  6. When they are cooked very well, drain water and let it be cool.
  7. After that, slice squid into rings or cut into serving-size pieces and set aside
  8. Roast green chillies in a pan until its skins are blistered.
  9. Pound roasted chillies, ginger, shallot and pepper together into a coarse paste.
  10. Mix squid slices and coarse paste in a big bowl.
  11. Add salt and chicken stock to taste
  12. Squeeze lime slices as you desire
  13. Sprinkle coriander leaves

Thin rice noodle with fish soup (Rakhine Mone Ti)

I. Soup Base
Ingredients
- 1 kg yellow pike-conger Fish
- 2 pieces of ginger (1.5 inches for each)
- 3 tablespoons shrimp paste
- 15 garlic cloves
- 3/4 tablespoon black pepper
- 2.5 inches of galangal
- Salt and chicken stock to taste.

How to do
  1. Boil fish with ginger (1 piece) till it is cooked.
  2. Debone the fish and squeeze out the water by mashing.
  3. Take only water and set aside fish (it will be used for fish garnish)
  4. Strain the liquid in which fish has been boiled.
  5. Add shrimp paste into liquid and boil until it smells good.
  6. After that, cool until solids settle.
  7. Then, Take only the clear liquid.
  8. Add some more water as you desired into the clear liquid.
  9. Add blended of ginger, garlic cloves and pepper.
  10. Add roughly pounded galangal.
  11. Bring a boil
  12. Add Salt and chicken stock to taste

II. Thin Rice Noodle
Ingredient
-         1 kg thin rice noodle
How to do?
-         Soak noodle in water for 15 min
-         After that, boil it until it is soften.
-         Drain water and cool it with a splash of cold water.
-         Set aside for soup



III. Side Dishes
     
1.    1 onion (sliced)      
a.    Fried or fresh onion slices
2.    1 lime (sliced) or tamarind juice
3.    A cup of coriander leaves





4.    Fish garnish
a.    Add ½ teaspoon oil and ½ teaspoon turmeric powder into a fish that was set aside.
b.    Cook over low heat and stir until grainy.
5.    10 green chillies or 10 red dry chillies
a.    Blend the chillies
b.    For green chillies, cook them with fish
c.    For red dried chillies, sauté them.

6.    Roasted pork fat (optional)
7.    Sliced fish cake (optional)






8.    Crispy pea fritter  (optional)







How to serve?

1.    Place noodle into a bowl

2.    Pour soup base.

3.    Add onion, coriander leave, chillies

4.    Add sliced fish cake or roasted pork fat or fritter (If you wish)

5.    Adjust the taste with lime or tamarind juice and salt.

Baked Saba Fish Salad

Ingredient

  1. 1 Saba fish
  2. 9 to 10 green chillies
  3. 1 shallot
  4. 2 inches of ginger
  5. 1 lemon
  6. A cup of coriander leaves
  7. Salt and chicken stock
How to do?
 
  1. Wash the fish and bake it directly on oven rack.
  2. Wait until it is cooked well.
  3. Remove the baked fish from oven
  4. Skin and debone the baked fish.
  5. Pound green chillies, shallot and ginger into a coarse paste.
  6. Add fish and chillies paste into a bowl.
  7. Add lemon juice by squeezing the slices.
  8. Mix well.
  9. Add salt and chicken to taste.
  10. Sprinkle over coriander leaves.
Baked saba fish salad is ready. J
