Bamboo Shoots (Wa Toke)

Ingredients

  1. 5 to 6 pieces of fresh bamboo shoots
  2. 8 Green Chillies (Sliced)
  3. ½ teaspoon turmeric powder
  4. 1 teaspoon of peanut oil
  5. ½ tablespoon of shrimp paste
  6. A cup of fresh basil leaves
  7. salt and chicken stock

How to do?

  1. Cut and Slice the bamboo shoots.
  2. Put them into a saucepan after washing.
  3. Add sliced green chillies, turmeric powder, oil, shrimp paste, salt and chicken stock.
  4. Pour half glass of water.
  5. Place the saucepan over the medium heat and bring to a boil.
  6. Add basil leaves and adjust taste.
  7. Leave it until all of water evaporates.

Pig’s head salad

Ingredients

-          1 pig’s head

-          2 pieces of 1.5 inch of ginger

-          12 garlic cloves (you don’t need to peel.)

-          4 to 5 tablespoons of sweet sauce.

-          25 to 30 green chillies

-          2 medium onions

-          5 lime slices

-          Salt and chicken stock to taste.

-          1 medium cucumber


How to do?
 
  1. Clean and remove any hair on head by singeing or plucking.
  2. Cut into 4 pieces and wash them.
  3. Place the pieces of head into a large pot.
  4. Pour the water to cover the pieces of head.
  5. Grind together garlic cloves and 1 piece of ginger into a coarse paste.
  6. Add sweet sauce , garlic coarse paste, salt and chicken stock into the pot.
  7. Heat the pot over medium heat and wait until pig’s head is cooked well.                (Approximately, it takes about one hour.)
  8. Roast the green chillies in a pan until the raw smell is gone.
  9. Pound roasted green chillies, one onion and 1 piece of ginger into a coarse paste using a mortar and pestle.
  10. Peel cucumber and slice in half lengthwise and cut into thin slices.
  11. When the pig’s head is cooked well, chop them into the small pieces.
  12. Put them into a big bowl and add the chilli paste, cucumber slices, salt, chicken stock.
  13. Squeeze the slices of lime.
  14. Mix them together and adjust the taste.
  15. Cut the onion into slices.
  16. Sprinkle onion slices over the salad.


Actually, this recipe is not difficult but it does take time.

Ray Fish Soup (La Kyaut Thar Ah Ray Thout)


Ingredients



- 1 kg Ray Fish

- 4 or 5 dried red chillies

- 1 shallot and 1 inch piece of ginger

- 1/3 teaspoon of turmeric powder

- 1/4 teaspoon of shrimp paste

- A lump of tamarind (soak in water)

- A cup of coriander leaves



How to do?

  1. Cut Fish into serving size pieces
  2. Wash them and set aside.
  3. Blend chillies, shallot and ginger together into a paste.
  4. Put the fish pieces, chilli paste, turmeric powder, shrimp paste, salt in a pot.
  5. Pour water as you desired.
  6. Heat the pot and bring to a boil.
  7. Squeeze the soaked tamarind.
  8. Adjust salt, chicken stock and tamarind juice to taste
  9. Sprinkle coriander leaves

Pan-Roasted Shrimps with pounded chilli


Ingredients
 
-          1 kg Shrimps

-          15 green chillies

-          1 medium onion

-          Salt and chicken stock


How to do?

  1. Wash shrimp and place them in a saucepan.
  2. Add a little amount of salt.
  3. Heat the pan and keep stirring until colour turns pink.
  4. When the shrimps are cooked well, set aside.
  5. Add chillies into a saucepan and stir until raw smell is gone.
  6. Remove from heat and pour cold water. (In order to keep original colour.)
  7. Put the chillies, onion, salt and chicken stock together into a mortar and pestle.
  8. Pound to a coarse paste.
 
Ok. Now roasted shrimps with pounded chillies are ready for u.

Glass Noodle Salad (krrar saen thoe)

Ingredients

  1. 3 packs of glass noodles
  2. 3 eggs
  3. 4 medium potatoes
  4. 5 or 6 teaspoons roasted chickpea powder
  5. a lump of tamarind (Soak in water)
  6. 6 teaspoons chilli paste
  7. 1/4 teaspoon turmeric powder
  8. 1/4 teaspoon shrimp paste
  9. Onions slices (Approximately 2 medium onions)
  10. A cup of coriander leaves


    How to do?
    1. Soak the noodles in a pot of cold water for 20 minutes.
    2. Boil the water in a saucepan and cook the noodles until softened.
    3. Drain the noodles
    4. Boil the potatoes and eggs.
    5. Drain and peel them.
    6. After that, mash the potatoes and eggs.
    7. Heat the oil in a frying pan.
    8. Add onion slices and stir until they turn golden colour.
    9. Remove from oil and set aside.
    10. Add chilli paste, shrimp paste and turmeric powder and sauté.
    11. Mix noodles, sautéed chilli paste, mashed potatoes and eggs and chickpea powder together.
    12. Squeeze the soaked tamarind.
    13. Add salt or fish sauce and chicken stock to taste.
     You can serve by garnishing fried onion and fresh coriander leaves.
