Roselle leaves soup (Chaing Pong Hunn Ray)

Ingredients

-  1 or 2 bunches of Roselle leaves

-  Sliced green chillies (around 6 or 7 chillies)

-  ½ teaspoon shrimp or fish paste

-  1 and ½ teaspoon pounded dried shrimp

-  Salt to taste
How to do?

  1. Pinching out Roselle leaves and wash
  2. Pour a small amount of water into a large saucepan
  3. And add Rosella leaves and shrimp paste
  4. Bring to a boil and stir until well combined
  5. After that, add some more waters (1 or 2 cups)
  6. Add Chillies, pounded dried shrimps and salt
  7. Wait until the water begins boiling again and taste to try the seasoning
  8. Ready to serve
It's a bit spicy and sour. That will make you fresh. :)

Chilli Crab Paste (Ka Nat Htaung)

Ingredients

-          5 Dungeness Crabs
-          10 dried red chillies
-          ¼ teaspoon black pepper
-          4 cloves of garlic
-          1 inch of ginger
-          A pinch of salt
-          Small amount of chicken stock (optional)

  
How to do?

  1. Clean and wash the crabs and place them in the saucepan.
  2. Pour the water over the crabs covering all.
  3. Bring to boil over medium heat.
  4. Wait until the crabs are cooked well and drain water.
  5. Then, remove the shell from crabs and just take white meat.
  6. After that,  put crab meat and all ingredients together into mortar and pestle.
  7. Pound to a paste.

Yellow Glutinous rice (Si Hta Mon)

Ingredients

1kg glutinous rice
1 large red onion, thinly sliced
1/2 teaspoon turmeric

1 piece of ginger
3 tablespoons oil
1 cup warm water
a pinch of salt to season
2 tablespoons toasted sesame seeds and 1 cup of grated fresh coconut

How to do?
    
  1. Wash the glutinous rice and then leave to drain the glutinous rice.
  2. Heat oil in the saucepan.
  3. Add the onions to the hot oil and stir until they are soften.
  4. Add pieces of gingers  and turmeric powder to the mixture. Give it a stir until they are lightly golden brown.
  5. Add the glutinous rice to the remaining oil and sprinkle salt. Give this a quick stir.
  6. Add water just enough to cover the glutinous rice. Cover and let it cook for about 15-20 minutes on low heat.
  7. Once the rice is cooked and totally absorbed the water, then it is ready to serve.
  8. Garnish the grated coconut and sesame seeds. (Optional)
