Ingredients
- 1 pig’s head
- 2 pieces of 1.5 inch of ginger
- 12 garlic cloves (you don’t need to peel.)
- 4 to 5 tablespoons of sweet sauce.
- 25 to 30 green chillies
- 2 medium onions
- 5 lime slices
- Salt and chicken stock to taste.
- 1 medium cucumber
How to do?
- Clean and remove any hair on head by singeing or plucking.
- Cut into 4 pieces and wash them.
- Place the pieces of head into a large pot.
- Pour the water to cover the pieces of head.
- Grind together garlic cloves and 1 piece of ginger into a coarse paste.
- Add sweet sauce , garlic coarse paste, salt and chicken stock into the pot.
- Heat the pot over medium heat and wait until pig’s head is cooked well. (Approximately, it takes about one hour.)
- Roast the green chillies in a pan until the raw smell is gone.
- Pound roasted green chillies, one onion and 1 piece of ginger into a coarse paste using a mortar and pestle.
- Peel cucumber and slice in half lengthwise and cut into thin slices.
- When the pig’s head is cooked well, chop them into the small pieces.
- Put them into a big bowl and add the chilli paste, cucumber slices, salt, chicken stock.
- Squeeze the slices of lime.
- Mix them together and adjust the taste.
- Cut the onion into slices.
- Sprinkle onion slices over the salad.
Actually, this recipe is not difficult but it does take time.
