Ingredients
- 3 packs of glass noodles
- 3 eggs
- 4 medium potatoes
- 5 or 6 teaspoons roasted chickpea powder
- a lump of tamarind (Soak in water)
- 6 teaspoons chilli paste
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon shrimp paste
- Onions slices (Approximately 2 medium onions)
- A cup of coriander leaves
- Soak the noodles in a pot of cold water for 20 minutes.
- Boil the water in a saucepan and cook the noodles until softened.
- Drain the noodles
- Boil the potatoes and eggs.
- Drain and peel them.
- After that, mash the potatoes and eggs.
- Heat the oil in a frying pan.
- Add onion slices and stir until they turn golden colour.
- Remove from oil and set aside.
- Add chilli paste, shrimp paste and turmeric powder and sauté.
- Mix noodles, sautéed chilli paste, mashed potatoes and eggs and chickpea powder together.
- Squeeze the soaked tamarind.
- Add salt or fish sauce and chicken stock to taste.
