Squid Salad (Ra Gra Thoat)

Ingredients

  1. ½ kg squid
  2. 12 green chillies
  3. 1 shallot
  4. ½ inch piece of ginger
  5. 1 teaspoon of black pepper
  6. 1 lime (sliced)
  7. A cup of coriander leaves
  8. Salt and chicken stock

How to do?
 
  1. Pour some water into a pot and add 1/2 teaspoon salt.
  2. Heat to boiling over high heat               
  3. Clean squid and rinse them under cold running water.
  4. Add them to boiling water
  5. Cook until tender
  6. When they are cooked very well, drain water and let it be cool.
  7. After that, slice squid into rings or cut into serving-size pieces and set aside
  8. Roast green chillies in a pan until its skins are blistered.
  9. Pound roasted chillies, ginger, shallot and pepper together into a coarse paste.
  10. Mix squid slices and coarse paste in a big bowl.
  11. Add salt and chicken stock to taste
  12. Squeeze lime slices as you desire
  13. Sprinkle coriander leaves
