Ingredients
- 1 Fish head (I used catfish head)
- 3 tablespoons of red chilli paste
- 2.5 tablespoons of peanut oil
- 1 shallot
- 5 cloves of garlic
- 1 inch piece of ginger
- ¼ tablespoon of turmeric powder
- 2 or 3 stalks of fresh lemongrass (Sliced)
- 2 lemons (Sliced)
- ¼ tablespoon of shrimp paste
- Salt and chicken stock
- A cup of coriander leaves or basil leaves
How to do?
- Clean and wash fish head
- Pound shallot, garlic and ginger together.
- Heat oil in a pot over low heat.
- Add chilli paste, turmeric powder, shallot, ginger, garlic paste and shrimp paste and sauté.
- Add fish head and pour water as you desired.
- Add sliced lemongrass and bring to a boil.
- Add squeezed lemon juice
- Add salt and chicken stock and adjust the taste.
- Sprinkle with coriander leaves or basil leaves.
